I’m curious where you got the lamb temperatures. My reference cookbook (The New Best Recipe by America’s Test Kitchen) scales closer to beef.

Here’s what I have. The temperatures for Rare, Medium-Rare, Medium, Medium-Well, and Well-Done.
Lamb: 125°F, 130°F, 140°F, 150°F, 160°F
