Thermometer Reference Card

Next to a digital scale, I'd say a good probe thermometer is the most important kitchen tool that nobody has. If you're not everybody, then you might find this reference card handy.

    I'm curious where you got the lamb temperatures. My reference cookbook (The New Best Recipe by America's Test Kitchen) scales closer to beef.

    Here's what I have. The temperatures for Rare, Medium-Rare, Medium, Medium-Well, and Well-Done.

    Lamb: 125°F, 130°F, 140°F, 150°F, 160°F
